We are big fans of bacon in our house and love sausages, serrano ham, prosciutto and other similar cuts, but for some reason we are less into your more regular ham and pork.
I say we, but really it's me. I've never been a huge fan of ham - I tend to find it too salty (and before you say anything about bacon I always go for smoked and, well, it's bacon).
We have things like pork carnitas fairly often, but other pork dishes don't come into my menu-planning as often. Now and then, though, we get pork cuts like chops in our meat box that remind me I do quite like them too. Jaegerschnitzel and similar dishes are one go-to, but I think these apple stuffing crusted pork chops have become another.
I actually first made a version of this years ago using a whole roasting joint and we really enjoyed it, but it was a little hard to get it cooked through in the middle. I thought I would try crusted pork chops instead and it most definitely worked out.
Pork and apples are a great pairing anyway, then add in some sage and the comforting texture of stuffing and you have a truly great main.
Steps to make these stuffing crusted pork chops
These chops are easy to make as all you do is:
- Get everything prepared - chop onion, garlic and herbs and grate apples.
- Quickly brown the chops then take them out of the pan.
- Soften the onion and garlic. Add the herbs, breadcrumbs and apple.
- Press the mixture onto the chops.
- Put them back in the skillet and finish off in the oven so the chops cook through and the top gently crisps.
I've mentioned before when I have shared stuffings like my rutabaga, bacon and date stuffing that we really should have stuffing more than a couple of times a year. We do enjoy them but for whatever reason they are too associated with Thanksgiving and Christmas, we rarely think to make them any other time.
This dish helps make stuffing more part of our regular eating and is a perfect way to enjoy all those apples that I know we'll be picking soon too.

Apple stuffing crusted pork chops
Ingredients
- 1 lb pork chops 450g, 2 chops (I used boneless but bone in would also work - if so you probably want a little more weight-wise)
- 1 tablespoon unsalted butter
For the stuffing crust
- ¼ onion finely diced
- ¼ apple coarsely grated
- ½ clove garlic finely chopped
- ½ teaspoon fresh sage finely chopped
- ⅓ teaspoon thyme fresh or dry
- ½ cup fresh breadcrumbs 33g
Instructions
- Preheat the oven to 400F/200C. Prepare the onion, apple, garlic and herbs for the stuffing crust, if not already prepared.
- Pat the pork chops dry and warm half the butter in a small-medium skillet/frying pan (that's suitable for the oven) over a medium-high heat. Brown the pork chops just a minute on each side so they are sealed then remove from pan and set aside.
- Add the rest of the butter to the pan, reduce the heat a little, and add the onion. Soften for a couple minutes then add the garlic. Cook a minute or two more, stirring now and then, then add the apple, sage and thyme. Stir and cook a minute. Add the breadcrumbs and stir well then remove from the heat.
- Press the stuffing mixture on top of the two pork chops then put the chops back in the skillet. Bake in the oven for approximately 20 minutes until the pork chops are cooked through but not overcooked and the stuffing is gently crisp on top.
