This looks amazing and I do love Kale...and eggs and cheese and everything else in the dish:) Too bad I did not see this post before I made breakfast....there is always tomorrow being snowed in and all. The egg makes it even better, this so my kind of food! 🙂 I do agree with you that kale can be a little challenging, it is horrible when overcooked, most veg are but kale I think might be even more sensitive to this and it is so delicious when cooked right!

I agree, Jade, it does work well in place of spinach in many things but does have a more distinct taste often. Here it works really well with all the other flavors and is really mild the way it's cooked. I hope you'll try it!
