I made this for dinner tonight, and it was delicious. It was a bit reminscent of a thick split-pea soup (or maybe I just haven't had split-pea soup in a while!). I made triple the recipe because of the size of my pumpkin. Tonight I had it as a first course, because I wasn't sure how filling it would be, but I think it works well as a stand-alone meal as it is pretty filling. The cheese was a great addition and well-needed. I didn't have any couscous, so I added the last bit of quinoa that I had in the pantry, which fit in nicely and gave some different colors to this very green soup. Thanks for the recipe, I was looking for something different to make this weekend, and this fit the bill!
