I'm not sure that it would, as halloumi is not a melting cheese like a cheddar etc, instead it needs to crisp up on the outside to get its nice texture. If the cheese is already in the bread inside the panini press, it won't have that contact with the heat and I imagine would just go soggy. If you've already fried the cheese, you could finish it off in a panini press to get a crisp outside to the bread but I wouldn't do it too long and it's not really needed. Do give the recipe a try, though, as it is indeed delicious.
