Sure - I normally put both metric and US measures since I'm originally from the UK myself, but must have missed on this one. So a cup is 240ml, which if you were to measure with tablespoons is about 16 tablespoons. So for this recipe, you'd use about 8tbsp (1/2 cup). If you have the time, I highly recommend making your own curry paste (see link above), but a good store-bought is also good. Enjoy!

Generally I would say low, when it's a low and high option, but one thing is whether your low is more like "warm" - in some versions there is a setting to keep food warm, this is not what you want, but a low heat cook. Hope that makes sense and it works out for you!

Thanks for your comment. I appreciate this would traditionally be served with sticky rice, but sadly it's not particularly common outside the region. Ideally, absolutely serve it with sticky rice, which I love, but since this is intended to be accessible to a wider audience, rice in general is a more realistic description.

A Thai would not pour this over rice. Sticky rice is always served in a woven grass pot and eaten separate from the bowl of curry. My significant other is from a farming village East of Roi Et. Her family were subsistence farmers - main crop was brown sticky rice.

The ingredients certainly reflect that. Asia has quite a large population of Islamic people now, doesn't it?
