Sorry to hear it was too soft, it definitely can be on the soft side which is why I say to put the filling into the freezer for a little bit to firm up for when you wrap it in dough. It can also depend on your peanut butter, too as some are softer than others. And yes, certainly ground nuts could help to firm it up further (I unfortunately wasn't able to get hold of any ground peanuts when I was making these but that would be my go-to if possible, probably swap out half the peanut butter for gorund and try from there).

Unfortunately the filling was too soft to roll into balls. Was a big mess although it tasted good it oozed out of the dough
Needs more binding like ground nuts

These were so easy to make and really delicious. The ginger syrup added a nice sweetness against the peanuts.
Will absolutely be making these again.
