Thanks Denise, it certainly is tasty. The only thing on that stem tip is if they are already pulled out at the store, they may look brown-ish even if they are a bit firmer because they've been pulled off a while, if that makes sense.

Living in Southern California, we have tons of good Mexican food here, but I've actually never had huevos rancheros before. You make it look so good and easy though! This would be such a great quick dinner on busy weeknights, and I love all of your avocado tips!
