Trying this soup out today. I had a few acorn squash and went looking for a recipe for soup, because who doesn't love a hearty out on a cool Fall night? This is a simple recipe and sounds delicious I have everything in the oven right now and it smells like a Holiday in the house. I can't wait to try it!

In reply to Patricia Walsdorf. I haven't tried with this particular soup so I can't say from experience, but I certainly think a little onion in there and, possibly, carrot would work fine.

Have you ever added onion or carrots? I try to pack in as many veggies as possible, but I don't want to ruin it.

This is delicious! The roasted flavours really pull through and give this dish and incredible taste. I've not eaten much squash in my life and was expecting this to be on the sweeter side and while it has a sweet note it's not overpowering. I will make this again for sure. Thanks for sharing this with us.

Locked up 8n the house due to the corona virus pandemic. I was looking for clean eating recipes that I could make with fresh produce because it’s difficult to find meat and canned goods in the store due to people hoarding. Thank you so much for this recipe! It was easy to make and absolutely delicious! It takes like Thanksgiving in a bowl!

In reply to Serena NOrrell. I haven't made an instant pot version as for one, this is so easy as it is and there's a certain flavor you get with roasting that's hard to get with other cooking methods.

In reply to Summer. I tend to use Galas or Braeburn as that is what we tend to have and the sweet-tart works well but yes I think Granny Smith would work fine as well. Hope you enjoy!

What a beautiful bowl of soup! I have never lived more than a few miles away from an apple orchard, so it is hard to believe fall exists without them! I'm glad it has become a tradition for you now too.
