So I haven't frozen them myself, but I'd say in general yes, you should be able to freeze them by wrapping them well with plastic/cling film/wrap then placing in a freezer bag and sealing up. However I would caution that I suspect the texture won't be quite as good after freezing.

The challenge is keeping things in proportion, so while you could make a slightly larger quantity of batter, it may throw the proportions off a little and particularly the egg, for example, you can't really add just a tiny bit more. You could try adding eg 1tbsp more flour, 1/2tbsp more sugar and 1/2tbsp more butter and see how that works.
