Hi, I'm afraid I can't really think what else would work in place of the rice, as it's a key element of both the texture and taste of dosas. Possibly you could play around with some combination of say chickpea flour and a starch like potato starch, but I'm not sure you'd get the right texture and proportions will be different too.

I'm keen to try making this as it sounds super interesting.. could I substitute the rice with something else? I have a rice allergy and gluten intolerance. Gluten free oats also don't work for me...

It was a little more effort than it needed to be, but they were really tasty so I still think worth it!
