So glad to hear you enjoyed, and those sound like great alternatives - certainly that part of the filling is a little flexible.

And the day after I made them, my daughter told me that Eccles Cakes are brought up in the new season of Good Omens on Prime Video! My largest biscuit cutter is 3 inches, so I used it and reduced the cooking time to about 20 minutes. I didn't have papaya, so I cut up dried pears, apples, and apricots that I had on hand. Delicious!

Glad to hear you enjoyed and that the tip was useful. And yes, can see that working well, too.

Made these today ❤️🧡💛 Thanks so much for the tip about the dried papaya as I am also unable to find any peel (Canada). I was also unable to find dried papaya, but used dried pineapple instead. FYI it works well!

I do mention that the filling is traditionally just currants, but like many recipes things evolve over time. And the additions I have put in here are consistent with most recipes you will find nowadays. You can, of course, omit them if you prefer but they add a lovely subtle flavor that definitely doesn't distract from the main sweet currant flavor. How fascinating to have that family connection.

The only ingredients inside an Eccles cake are currants, sugar and butter. I’m distantly related to the inventor of the Eccles cake so have insider knowledge

Mine don't tend to last long, but they should keep around a week in a sealed container. Just note the pastry will soften after a day or two.

I struggled a bit to find them too but got them in the bulk section of one of our local supermarkets. Raisins or a blend of raisins and dried cherries would be not bad as a substitute if you don't find them. Either way, hope you manage to try them.

I struggle to find dried currants in our local stores here, but the next time I find them, I'm buying several boxes. And this is just one of the recipes I'll use them in.

I don't know how well they transplant, but would be wonderful if it did! I should point out these actually use dried currants which, while they can still be tricky to find, are at least year-round and last well. And yes, these are delicious!

How interesting! I've never come across them with any other fruit, but maybe they evolved in Canada. Either way I hope you'll try these and see how they compare!

I can't wait to make these and see if it's what I had or not.

When my children were young and I had lunches to pack, we OFTEN purchased packs of cookies made by voortmans cookies called eccles cakes . They were a favourite and made with a variety of fillings (apple, raspberry, strawberry. Etc.)
I think they are still available in some our stores. Thankyou for the recipe and the memories. I will difinately try these.
Always wondered why they were called eccles!
