How interesting, I know there are variations, but I've not heard of a bubble and squeak without potatoes - that to me is always a major component. But families do of course evolve things to their taste over time. Certainly you'd not have velveeta in the UK so that pretty much has to be a later adaptation. Always fascinating to hear the variations in dishes!

Ours is boiled shredded cabbage in salt water (drained and rinsed after), pork sausage, flour, milk, cheese (I prefer Velveeta), and butter to create the white sauce. Layer the cabbage and sausage, pour white sauce over the top. Sprinkle bread crumbs, bake at 400 for 25 mins!! Gram always said, “first the cabbage makes you bubble then the pork makes you squeak!!!”

Yes, indeed, the sound it makes as it cooks is the most common explanation of the name (I mention about being partly linked to the fire noise but the plate/steam sounds another way you would get the sound too!)

I've always understood that it's name comes from the sound it makes when cooking, it bubbles and squeaks! My dad used to make make it with a weighted
plate on it, when the steam escaped between plate and pan you got the sound.
