So glad to hear you enjoyed and yes can imagine purple carrots giving a nice color too! This is great for leftovers but you can also just use fresh lamb as well and just brown it longer so it cooks.

This is such a lovely recipe to use with leftover lamb. I used a purple carrot (which is what I had) and grated that and it turned my pilaf to a beautiful purple colour. The family didn't mind but some folk may. The flavour was lovely and I served it with some yoghurt salad and some green salad. Will certainly make again when we have leftover lamb. Thank you for posting such a great recipe.

Thanks Hilda. I've seen the chickpeas but don't remember the pickled onions, but that sounds good too. One of my former workplaces had an office in Kazakhstan and I always hoped we might do a team meeting there but it never quite happened! Must have been interesting living there.

Like you, I lived in Russia and also Kazakhstan where plov was ubiquitous. I like your choice of spices for flavouring. I will change mine up in the future.
