Thanks for your perspective. Interestingly, I found a number of sources saying that tomatoes were one of the main differences and while yes, it came out of restaurants adding them to be a little more fancy, it was a long while ago and so has very much become typical for Creole style. But I appreciate there are likely different views and ways of making things as is true for so many different cultural dishes.

Loved the article. Just a tip, I am a Louisiana creole woman from Louisiana and I wanted to point out that we don't typically use tomatoes in our dishes. Cajun and Creole are more similar than different. Typically non-natives and restaurants geared toward tourists in the French quarter use tomatoes although it strays from the authentic dishes. With Jambalaya you will need to cook the meat and seafood first before adding in the other ingredients (and it also has a ton of rice uses more broth--no tomatoes!). C'est bon!
