Loved this recipe!! I did substitute brie for the cheese in the eggplant-bechamel. Probably added more than the recipe called for, too! 😉 It was so rich and delicious!

Delicious! I served it over mashed cauliflower/sourcream mix. I also added a lb of lamb chunks to make it meatier. Definitely a new favorite.
