I'll be honest, I'm not usually a huge dip person. It isn't something that immediately comes to mind when I'm thinking of things to make. That said, I'm always right in there if we are in Greece, Israel or other places in the region and baba ghanoush, hummus or muhamarra come out.
Maybe I'm just picky, what can I say. But one thing is for sure, both me and my equally discerning family enjoyed this cheesy corn pumpkin dip. And even better, it's one of the quickest dips to make. All you do is put everything in the food processor!
A different style of corn dip
Many corn dips leave the corn as whole kernels, while here I have blended them up with everything else. It's personal choice, I guess, but I find a smoother dip easier to scoop up and you still get plenty of the corn flavor.
I know I've called this a savory pumpkin dip, but the pumpkin is, in all honesty, not that strong. That said, I'm not sure it would be in most dips, but I think it still adds a nice hint of savory to balance out the other sweeter and richer flavors, and certainly gives a warm color. And it does all work so well.
You might imagine that I'd use mayonnaise in this. However I'm not the hugest fan of it, I have to admit, except for the likes of aioli.
As in my Mexican street corn salad, I'm a big fan of using yogurt (particularly Greek style) instead for creaminess but which is that bit lighter. I know, there's still plenty cheese in there (like the tasty Cabot cheddar) but you know what I mean.
That salad is in fact part of the inspiration for the flavors in this dip, using that touch of paprika and lime to add to the flavors. But this savory pumpkin dip is not particular Mexican in style, but rather firmly footed in your general snacking, party entertaining or picnic flavors. All delicious, however you categorize it!
You can serve this with pretty much any of your typical dipping tools - here we enjoyed it with plenty of crunch vegetables (peppers, carrots and snap peas) along with some homemade cheese crackers.

Cheesy corn pumpkin dip (savory pumpkin dip)
Ingredients
- ½ cup corn 80g (frozen, defrosted or fresh, cooked, as you have)
- ¼ cup pumpkin puree 4 tbsp
- ⅓ cup grated cheddar 36g
- 2 oz cream cheese 55g
- ¼ cup Greek yogurt 58g
- ½ teaspoon paprika
- ¼ teaspoon garlic granules
- ½ tablespoon lime juice
Instructions
- Put everything in a food processor and blend until relatively smooth and well combined. Serve chilled with raw vegetables and/or crackers.
